When asked about his inspiration for the upcoming season of Spring Special menus at Catharina’s, Executive Chef Garth Almazan doesn’t hesitate in replying, “All of the amazing produce that we get at this time of the year, without a doubt!” To honour the season and its delicious produce, Chef Garth has developed a fantastic menu to showcase the flavours, textures and feelings of Spring – and at the same unbeatable price of our much-loved Winter Warmer menu. With variety and value like this, you’re in for a treat!
Kicking off in September, the new Spring Special menu will change on a weekly basis, allowing Chef Garth to work with all of the ingredients that best represent the season. What are some of his favourites that you can expect to see on the menu? A few Spring delights taking centre stage include lots of spring fruits and berries used in sorbets, such as plums, peaches, nectarines and berries, and fresh purées made from spring peas, artichokes and asparagus. “Spring is an exciting time, offering some of the best produce of the year,” explains Chef Garth, “and it means that you don’t have to overcomplicate things. You can just serve great, fresh ingredients, simply prepared.”
When asked for a teaser of some of the dishes to come, Chef Garth replies, “I will be doing a variety of delicious salads, such as Nectarine and Goats Cheese; and Asparagus, Summer Berry and Ricotta. We’ll also have Scallop and Prawn Spring Rolls, and lots of raw foods, such as Saldhana Bay Oysters, Chalmar Beef Carpaccio and Steak Tartare.
