SPOTLIGHT ON STEENBERG RESTAURANTS AT TOP WINE AND FOOD AWARDS

Celebrations were the order of the day
when we heard the fantastic news
recently that both our restaurants,
Catharina’s and Bistro Sixteen82, had
been awarded the coveted American
Express Platinum Card Fine Dining Award
(2012). Especially since they were
chosen among only 13 restaurants in the
Cape Peninsula from a total of 78
restaurants across South Africa, with
Bistro Sixteen82 one of only four new
restaurants on the list.
This is a feather in the cap for Chefs
Garth Almazan at Catharina’s, and Brad
Ball who heads up the team at Bistro
Sixteen82, who, together with their
teams, deliver a 5-star culinary service
all year round. Bistro Sixteen82
received a special mention from well
known restaurant critic and head of the
judging panel, Victor Strugo, who
confessed to guests at the award
ceremony, that the Bistro is ‘somewhat
of a local’ for him whenever he visits
Cape Town. |

LONG SERVICE AWARDS
This month we shine the spotlight on Chef Tournant Robert Sompa, and
Reservations Manager Sumari Vorster, who each reached a 10 year
milestone in their careers at Steenberg this
year.
Both these two young people are a
tremendous asset to the company, and a shining
example of the calibre of staff who serve our
guests at our world-class destination.
This tribute from their respective managers is
well deserved:
‘Robert Sompa joined Catharina’s as a Steward in
January 2000, however his keen interest in what
was brewing in the cooking pots saw him
appointed as Commis Chef in 2003. Clearly in his
element, he excelled from the very start, and
was soon promoted to Chef Tournant, working in
all sections of the kitchen. His enthusiasm and
competence, and also his wicked sense of humour
make him a popular member of the kitchen
brigade’.

‘Sumari Vorster has undoubtedly been a key
contributor to Steenberg and its growth,
especially over the past five years. She is our
liaison with members of the Travel Trade and has
established valuable relationships over the

destination, and breathes remarkable new life
into her job each and every day’.

CHRISTMAS CAROLS CONCERT

We know that our annual Christmas Carols Concert
is an eagerly awaited festive season highlight
for many Constantia Valley residents. We will
once again spread some early Christmas cheer
with our open-air sunset concert on the lawns in
front of the hotel which takes place from 18:00
to 20:00 on 21 December. The highlight each year
is the magical candlelit sing-along to
traditional Christmas Carols.
Tickets cost R90 per adult and R45 per child
under the age of 12 years – with a maximum of 6
persons accommodated per booking. With capacity
for only 550 people, pre-bookings are essential.
Included in this musical evening is a glass of
Klein Steenberg wine or fruit juice for the
young ones, and a candle. Bring along your own

NEW RELEASE : STEENBERG HMS SPHYNX CHARDONNAY 2011
We release the latest addition to our
HMS Range in mid-October this year. The second
vintage of the HMS Sphynx Chardonnay is a
lightly wooded white wine that shows beautiful fresh
lime notes on the palate, with slight creamy,
buttery notes, from the brief wood contact. The
wine will develop a further creaminess with
bottle ageing.

This delicious medium bodied wine exudes
beautiful aromas of dried prunes, sour
cherries, spice and forest floor on the
nose, with soft oaky notes. Big tannins,
unique to Nebbiolo, gives the wine
backbone and structure. With its earthy

acidity, this wine ranks as a great food

passionate about keeping our
carbon footprint as low as
possible. We thought we’d share
news of some of our latest
‘green’ projects with you - we
hope they inspire you to ‘go
green’ too!
OUR WORM FARM
Did you know that without
earthworms there would be no
plants on our planet? Or that
worms can eat up to half their
weight in organic waste every
day, substantially reducing
landfill? Or that worm tea is
possibly the best food for
plants, and is being used by
farmers worldwide to nourish and
produce better crops?
For the past few months, our
newly appointed ‘lay worm
farmers’ Luzuko Sompa and
Sandile Mphothulo have been busy
cultivating a stylish new food
waste recycling system at
Steenberg, using composting
worms. The idea is to use
earthworms to turn the organic
waste on the farm into soil
conditioners for our newly
revived, historic herb garden.
Chefs Garth Almazan and Brad
Ball have been busy tending
this, and we look forward to
introducing delicious, fresh
produce from this garden into
selected dishes on the menus at
Catharina’s and Bistro
Sixteen82.
We are being assisted with this
by Full Cycle, a ‘green’ living
