SIZZLING SUMMER MENU AT CATHARINA'S
Summer brings with it a sense of ‘joie
de vivre’ prompting one to indulge in
one of life’s ultimate indulgences –
delicious cuisine. A taste of the
delectable range of dishes from our
talented chef’s new Summer Menu,
undoubtedly ranks among these. Catharina’s mouth-watering selection
offers ‘raison d'être’ to slip away for
a matchless fine dining experience in
our tranquil vineyards setting.

Garth Almazan’s delicious Summer Menu is
the perfect indulgence. Guests may opt
for the choice of a 2-course set menu
lunch at R165, a 3-course lunch at R195,
or indulge in one of the mouth-watering
dishes from the à la carte menu.
Starters include refreshingly satisfying
salads such as the Endive Salad with
avocado, pink grapefruit and candied
walnuts, topped with gorgonzola chive
dressing, and main courses such as the
Springbok Leg Parpadelle with tomato,
barley, extra virgin olive oil and
parmesan; while melt-in-the-mouth
desserts such as Caramelized Lemon Curd
Tart with roast pineapple ice cream and
passion fruit puree will melt all

THE 3RD HOLE AT STEENBERG

BRANDON SAMPSON, CHEF DE PARTIE, CATHARINA'S
Brandon Sampson is the accomplished right-hand
man of Executive Chef Garth Almazan at
Catharina’s restaurant. With a passion for his
chosen profession and a penchant for preparing
each dish to perfection, he plays an integral
role in the ‘kitchen brigade’ here.

24-Year old Brandon joined the team at
Catharina’s in October 2006 as Demi Chef. Having
just graduated from the Capsicum Culinary
School, in Cape Town, starry-eyed Brandon says
he had visions of the working world closely
resembling a BBC Cooking channel. Soon however,
he realised that reality was a little different,
somewhat, but he has nevertheless managed to
retain a ‘rose coloured’ view of his chosen
profession. He clearly revels in being a chef,
and working alongside Garth Almazan, he quickly
learned how to prepare food to world-class
standards, citing Garth as his mentor. Just two
years into his tenure he was promoted to Chef de
Partie in recognition of his professional
approach and impeccable work ethic.
Hailing from Bonteheuwel on the Cape Flats,
Brandon first cultivated his love of food and
food preparation from his mother, with whom he
spent many happy hours in the kitchen of his
family home. He also regards Jamie Oliver as an
inspirational figure who shaped his aspirations
to become a chef.
His work philosophy is based on the precept that
‘preparation is everything’, with only 10
percent of time and effort going into the actual
cooking of each dish. He loves a good curry, and
having grown up on the coast, he is a great fan
of seafood. |
